New – probiotic functional food for sportsmen


Functional food is the latest trend in science of healthful nutrition. The idea of it has first originated in Japan during the 80s of XXth century.

According to the Japanese Ministry of Education the functional food must have three main functions: nutritive, sensorial and regulatory and curative function.

The American dietetic association defines functional food as “complete, improved or enriched food”.

European institutions have the following requirements to the functional food:

Lactic acid products are also a perfect functional food. Population in today's Bulgarian lands has used them for more than 7-8 thousand years. They contain most of all 90 nutrients (proteins, carbohydrates, fats, minerals, etc.) necessary for each organism for adequate nourishment. The content of water and milk fats in the lactic acid products allows us to add water- and fat-soluble bioactive substances, such as phytonutrients, fibres, vitamins, etc. Lactic acid products are basic (matrix) products for a new food pyramid built on the basis of the essential amino acids, vitamins and minerals.

Lactic acid fermentation allows us to obtain lactic acid products in a form ready for easy absorption by the organism. The most important amino acids for muscles formation Leusine and Arginine. The daily dose of Leusine necessary for the organism is 3.5 g and Arginine – 1.3 g. 15 g Biomilk (1 table spoon) contains from 360 to 598 mg Leusine and 117 – 195 mg Arginine.
